Jet had prepared the eggs for everyone to have for dinner. Then they realized that Ed had left and Faye was missing. They ate their share of the eggs and when they realized the women weren't coming back, they ate their share so they could forget about them and move on. So Spike and Jet wouldn't have to sit there staring at eggs meant for people who were no longer with them. They're both emotionally stunted and that was their way of dealing with the loss.

Yup. Food was always a big deal because they were starving half the time. Even earlier in the episode Jet is saying something about getting food for the girls before he is cut off. Devouring all the eggs like that was a strangely poignant way of showing that they're clearly feeling stuff.

This episode ties up a lot of key story points and the end is cinematically well done. A sunset at the end for a sunset to two characters stories.

A lot of people have definitely already answered your biggest question. But yeah ultimately it wasn’t that they didn’t care. Them pushing through all of that food was them trying to not think about their own sadness.

Once you are finished with Bebop, will you consider starting Attack On Titan? If you put up a poll for the next show/anime to watch, I'm 100% sure it would win by a long shot. It is (in my humble opinion, currently the best show period.) But beware of spoilers, it's a rarity to find someone who doesn't run into spoilers when it comes to AoT, so it would be refreshing to see someone be completely blind to it all the way through. P.S The Subbed version has got some of the best Voice acting ever, It's the most popular too, although the english dub is fine, the japanese version makes it sound like dog shit. So I would definitely recommend the Subbed over Dubbed for AoT.

25 and 26 are a two-parter, better watch them in one go. What happened to Earth was the Gate Calamity. It was shown in the episode with the un-aging kid with the harmonica. He watched all that radiation rain down and destroy everything around him. It also destroyed the moon. Since then we saw that the planet has loads of satellite and rock debris which are constantly falling down and wrecking things.

Real folk blues is gonna mess your head up. It's gonna be worth it but don't worry it's not totally over. There's still the movie length session "Knocking On Heavens Door" which takes place before Edward and Ein left the ship.

This was totally sad indeed, it definitely makes you think about the past in general and how we always root somewhere and long for that later. It definitely did a great job at answering some things and wrapping up those two characters. I hope you see the two last a single go as it's a two part which also happens to conclude everything, I hope we're all ready for that one, I only vaguely remember a few things.

When it cuts to Ed's "Bye bye" on the deck of the ship always gets to me. Spike and Jet are totally sad about it but they try and cover it up by stuffing their faces with eggs a la Cool Hand Luke

OK, let me try to explain. The scene of devouring eggs might express their feelings of loss. Faye left, Edward and Ein left. After knowing they left from Bebop, only eggs which Ed's father gave to Spike and Jet remained. All what the two guys could do was to devour eggs without any words as a dinner to fill their loss.

I've heard someone say that they broke down on the egg scene because they've been a place in their own life where they were so starving that they'd scarf down anything available to them.

they're eating their feelings basically. At the end of the first episode, they witness messed up stuff, they pass the time/get by, by eating, beginning and end of the episode. So, they feel sad at their compadres leaving, so they're eating their feelings away, like they always have.
