Yeah now that you mention it the last Holy Grail War was kind of a sausage fest. About the only female servant was Saber. (Not counting Assassin because Assassin was several entities and only one of them took a female form). Also I think a big part of why Rin's pissed about Kiritsugu not teaching Shirou, has to do with her own relationship with her father. Her father highly valued the Tohsaka family magic and endeavoured to teach Rin everything he could before his death. And we remember from Fate Zero how pleased Rin always looked when he'd teach her. It wouldn't surprise me if she equated a Mage teaching their heir, with parental love. Seeing Kiritsugu neglecting Shirou's training as being tantamount to parental neglect.

I think now would be a good time to tell you about an interesting way Servants can gain mana in the original game (the one that has sex scenes and stuff). You see in the game a servant apparently can gain mana through sex... which means depending on the route Shirou could get it with Saber or this new servant. Though I think this method is game only.
