Knov loses the colour in his hair due to Marie Antoinette Syndrome. It's a condition that doesn't have much evidence aside from alleged historical sightings. Basically when someone goes through an intense situation and deals with extraordinary emotional stress or trauma, their hair turns stark white. it's used in a decent amount of anime to indicate change in a character due to stress or trauma.

Reminds me of the 80s Canadian movie The Peanut Solution. Kid loses his hair after being scared by something. Terrible movie now, but gave me nightmares as a kid.

Regarding the eagle and why it felt so out of place, I think it was scared and confused by the king's aura. So the eagle went into a flight or fight response and attacked the closest thing to it. I believe it was the author trying to show us that the king's actions have unintended consequences. Similar to how the king playing games to pass time ended up being a crucial plot to the arc.
