It is fairly simple. If a game option (or anything really) can be entirely ignored at will, it cannot affect the game negatively. And if you cannot ignore it, you have to explain why, without sounding like douchebag.

So, I agree with this episode on the whole, but I actually have run into a situation where "accesiblity options" actually gave me a competitive edge. I was at a local convention and noticed they had a guilty gear tournament. I had an hour to burn until the next panel and decided to play, even though I'd never played Guilty Gear a minute in my life. I select this "stylish mode" thingy and square off against my opponent. I start pressing square, and thirty seconds later I win the first round against a relatively skilled player. I think Guilty Gear's implementation of Stylish Mode (an accessibility option, even if only by proxy) is poor, rather than accessibility options themselves being a faulty idea. Not a criticism of anything, just a cautionary tale I thought I'd share.

I like MvC3's Simple Mode, where you don't have to do special inputs but, as a consequence, you only get a limited subset of moves available to you.

I mentioned this elsewhere, I'll do it here, too: the worst is that this isn't even NEW for Nintendo. They've been doing it since AT LEAST SMB3 on the original NES (P-Wing, Cloud powerup, Warp Whistle), so they have a precedent of DECADES for this kind of thing that nobody had a problem with until now for some stupid reason.

Honestly, worth the dollar a month (sorry I can't give more as of now, bills and whatnot) just to get to read good comments and not the dreck on YouTube.
