As someone who does not follow sports, let alone American Handegg, the statement "Given the way the NFL play-offs work, if you are a winning team, you have a very good shot at making the play offs" is baffling. Like I seem to only ever hear about play off games unless somebody I am talking to takes an active interest in the sport, so just the idea that winning teams might not play in the only games I ever heard about is very confusing to my very smooth brain.

It's just that about 50% of NFL teams are able to compete in the post season playoffs, so any winning schedule is likely to get you in the top 50% of teams. If the playoffs only included the 8 best teams you'd need a record significantly better than when they include 16 teams to qualify. In college football, for example, only the top 4 teams out of 130 make the playoffs. You need a nearly perfect regular season record to make it in.
