Valyria was a peninsula in Essos that was destroyed a few hundred years before the current timeline in an event called The Doom which wiped out most of its human and dragon population. Before The Doom, there were over 1000 dragons in Valyria and many houses had them. The Targaryens were a minor house with very little power there. 12 years before The Doom Daenys Targaryen, called Daenys the Dreamer, foresaw it in a Dragon Dream and convinced her father Aenar Targaryen to move the entirety of House Targaryen and their dragons to Westeros where they settled on the island of Dragonstone. The Velaryons and another house called the Celtigars also moved to Westeros before The Doom happened, but it was because they were non-dragon riding houses which meant they would have been of a lower class in Valyria. The Velaryons are a dragon riding house now though ever since Corlys married Rhaenys Targaryen. This is why the Targaryens and Velaryons say they are of the blood of Old Valyria and The Blood of the Dragon. Only 3 houses survived The Doom, and the Targaryens were the only dragon riding house. White hair was also a common characteristic among Valyrians so only those with Valyrian blood would have it. People with Valyrian blood often view themselves as superior to others because only someone with Valyrian blood can be a dragon rider. Kind of long but hope this helps with some of the backstory for the main houses in the show. The big model Viserys is building in his chambers with the stonemasons is a model of the city of Old Valyria.
