What Varga says to Emmet about using his wealth to hide from the masses, his bulimia and him being the wolf are all directly linked. He is a predator and a glutenous one at that, and if he gained weight from his gluttony it would be an indicator of having more than others, making him a target.

The show may have been implying this, but the problem with that argument is that obesity isn’t linked to wealth in modern, developed nations, like it was in the past. There are many people living in poverty that are obese.

Yeah I considered this, but if the "Pitchfork peasants" were to discover his gluttonous nature, that is the one thing Varga fears. The bulimia could also signify other things that I don't want to go into because it is spoilers.

The narration story is based on Peter and the Wolf, which is a symphonic tale. Not sure if explaining the story could spoil anything related to Fargo so I'm not gonna bother.
