I believe other creators post their reactions on YT based on some of the most significant scenes. That's how they try to break it down in the time frame. And yes, we did see Whaletail Island being mentioned back in Book 2 when Team Avatar was searching for Appa. It was also mentioned in Book 1, Episode 2 when Aang was talking about places he wanted to visit before traveling to the North pole.

The season finale is actually split into 4 parts (episodes 18 to 21)! I've seen a lot of reactors split up episodes 18-19 and episodes 20-21. Each part is divided for you by a different title, so you'll know when the episode ends.
