The reason why they're going to the North Pole first is because the avatar has to learn the bending styles in a specific order. So for Aang, it has to be: water, earth, and lastly fire :)

Here's something I saw that might help you understand why he plans to learn in the order: Air, Water, Earth, Fire (I think they mentioned the order at the start of the ep). Don't remember how much they explain in the show and how much is just theory but kinda makes sense (don't think it's really a spoiler but you don't have to read on if you want to try to figure it out why yourselves later, just thought knowing this might make it less frustrating): "You need to learn control (earth) before you learn power (fire), fire teaches you force you need for air, air teaches you flow before you learn water, water teaches you stillness/balance before you learn earth, and so on." So it's a cycle you can start anywhere depending on your natural ability which for Aang is air. He doesn't have to learn in order but it's much easier that way.

I was hoping you’d notice the Dave Filoni credit! He directed episodes 1 and 2 as well!(plus more to come). I believe this series was his first directing credit. He also worked on some character design in this first book. The creators/writers of the show (to my knowledge) have never officially confirmed this series is directly inspired by Star Wars, but there are definitely similar tropes and thematic elements throughout the series. I won’t say anymore because I don’t want to accidentally spoil, but maybe towards the end I’ll link you a really good article about it. Glad you’re enjoying the ride so far!
