Select a character and press the POV button (looks like an eye). It'll teleport you into the characters head. Press and hold the right thumb stick to adjust your position if you need to.

Impressive game - given that Quest 1 is on its way out and Quest 2 is selling off the shelves, my humble recommendation is for the Quest 2 build to be a Quest 2 build and not try to dumb it down for Quest 1ers. Just a humble suggestion.
