Weight cutting can be brutal on the fighter. The goal is to fight at the least weight you can get to but still be able to fight. For example say your kind-of a small heavyweight who walks around at like 220-235 pounds. If you can lose weight and fight in the 205 pund devision, after the weigh in you can eat and drink. So by the time of the fight you may actually be weighing 210-15 pounds if the fight isn't until the next day. So you will have a size advantage. In real life the weigh in and the fight are not usually on the same day.
