Laurent spelled it out in the 1st case ending. They're basically modern Robin Hoods scamming the bad guys who take advantage of others but also earning some profit for themselves along the way.

thats how it is in hustle. they have to pay the crew that helped them. pay for the euipment, suits, fake ids, etc etc. running a scam is like making a film. yeah you made 100 mil but you spent 80 to get it so your prophit is only 20 mil lol plus like another commentor said: they love it. scamming is an art form to them. not scamming would be like a singer not singing, they just cant do it.
