You asked about the original Fullmetal Alchemist series; you don't have to watch that. It's essentially the same story with a different ending that was written by sometime other than the original author for production reasons. Brotherhood is the only one I recommended on a first watch since it's the full story by the original author in one series. But you could always check out the original later to see how most of the fans were introduced to the series.
