I was gonna suggest that you should watch Levi's backstory next - it adds a lot of depth to his character. Great that you are watching OVAs, although optional, they have a lot of valuable content, especially this one, Ilse's Notebook (imo should be watched after S2/S3) and Lost in the cruel world (about Mikasa, also S3). Cheers!

Ilse and No Regrets are typically done after S1. Lost Girls 1 & 2 after S2. Lost Girls: Lost in a Cruel World mid season 3, though watching after S3 can work just as well. Ilse however is quite important to watch before S2 and is the only OVA that is straight up manga canon as well (Though No Regrets is basically made manga canon retroactively by Isayama)

They have a list of the best possible watch order, there is a big reason why hardcore AoT fans recommend the order to include Ilse's OVA after Season 2 Episode 1, instead of before.

I mean its specifically shown to us and even from Levis first appearance i's specifically written into dialogue and action of character. Hange joking to Levi before they left the walls , and After Levis first shown kills of titans audience see his disgust at the titan blood after saying to the dumb titan to chill or it will get messy (imp paraphrasing) which makes the scene straight after when one of the scouts was dying and blood was pouring out his gut , Levi held his hand, which when you look back into that scene knowing he's 'clean freak' (hanges words intro on screen ) adds a bit more depth into levis character

I always flinch when people use OCD about neat freaks, because OCD is about so much more than just wanting things to be clean at all cost. So I will never call something OCD unless I have more than that one symptom. (And yes, I'm educated in neuro/psychopharmacology) - Kat

Yeah, I understand that it doesn’t strike you in the face that Levi is the kindest person in the show. His cold ass demeanor can be standoffish but He is an introverted person, he feels but doesn’t show nor express much and somewhere in the future seasons we have some more explanations about him and his personality and more backstory also.

I don't agree that Ilse's Notebook should be watched before S2 - I think it works much better after the reveals in S2 (both S2E05 and S2E10 reveals), not before.
