In this battle, Kumoko has litterally no option to use against Ariel. She has crazy stats in both attacks and defenses, very high defensive skills and more importantly, she has Gluttony, making Sloth (the Seven Deadly Sin she used against Araba that was, in some way, an ennemy like Ariel) totally useless against her, since she just has to open and close her mouth to regenerate her SP. Ariel is the OP and she proves it :)

About your question about Sin and Vertue skills, did you notice how Kumoko sees humans as Exp for a few episodes ? It's because of Pride.

How 7 Deadly Sins and Seven Heavenly Virtues affect your mind is described in a further volume (volume 8). So it's not that a problem that anime didn't explain that.
