Any tips for gusting from behind with fly? The enemy team always seems to see it coming and I end up in the middle of them with my d in my hand. Should I be flying into bushes and hiding the flight path better?

Yes, to fly behind and gust you want your fly path to not be in vision of the enemy team at all. If they see you flying they have 2 seconds to react which is really easy to dodge the following gust. Fly to a bush or fog of war behind them and then E into position and gust, they shouldnt see you before the gust. Gust is a HUGE range so you can fly quite far away from their team to achieve this and still hit a teamwide gust. If you see them reacting beforehand, go to the replay and check the enemy vision to see when they saw you and how you could have pathed to avoid it.
