In both these tutorials we're simply exploring some of the slight variations that will occur from person to person. When inspected and compared we can see these slight variations aren't quite so slight. Some faces may have eyes set a little further back than others. The lips might align perfectly or one lip overlaps the other. The nose can be smooth, bumpy or hooked.
Exercise
One wonderful exercise is to draw a head in profile and then trace over it again and again using tracing paper (or layers if working digitally), making subtle variations to see just how far you can push the proportions before things start look really off.
This will help you to develop a strong sense of design so you can invent your own faces that actually work.
