Hi everyone, I hope you're doing well. I've come to brighten your week with one of my favorite quick lunch, brunch, breakfast, second breakfast, snack food recipes ever. Unlike the other recipes I've posted, this one isn't about following instructions - it's about 3 key ingredients that in their combined flavor profiles come together so well rounded and perfect, it's gonna be a tango on your tongue. And the three it takes to tango are:
cheese, grapes and walnuts.
You read that right. Most people would consider this an unusual recipe, but it's one worth trying and reasonably healthy, too.
To start, take some of your finest bread - only the best will do for this gourmet recipe (you can use any bread)
and toast it do your favorite degree of charred-ness. I like mine lightly golden.
Voila. You have an edible shovel for the rest of the ingredients.
The stars of the show are going to be the toppings:
First you're gonna wash and halve some grapes. Easy enough. Depending on the size of your grapes and the size of your slice of bread, you will need at least 4 per slice (8 halves). Feel free to eyeball this, the best I can do is give you a rough estimate because as with everything in nature, food comes in all shapes and sizes. You can use any color grape, it will all taste equally delicious.
Lightly toast some walnuts to bring out their flavor. You can use a frying pan on medium heat or put them on a little tray or piece of aluminum foil and let your oven do the work (a broiler is faster but watch out, nuts burn extremely fast. before you know it they've gone from light brown to charcoal if you take your eyes off them.)
You will need at least 2 whole walnuts (4 halves) per slice. Mine came fresh from the garden of my disability carer's sweet mother and I had to crack them, but feel free to buy them already shelled. If you don't have a nut cracker like any regular person, groove joint pliers work just fine.
The stuff that binds them all together:
The cheese. Honestly, here you have free reign over which cheese to use, though I recommend you keep it on the creamy/soft side. I'm using ricotta cheese in this particular rendition, but you can easily sub cream cheese, mascarpone cheese, heck, you could use brie. All of them will taste amazing. Depending on your bread I reckon you will need 2-4 tablespoons per slice. But hey, I'm not the boss of you. Just slap it on until the spirits of your ancestors whisper "that's enough, child".
You may mix some honey into the cheese itself like I did, or you can use the lazy technique of 'just drizzle some on top' - no one's judging your quarantine enthusiasm over food preparation.
Lastly, arrange the grape halves and crush the walnuts over the top.
Finally, you have yourself an amazing, easy and satisfying meal rich in protein, fiber and antioxidants. If you ever wondered if there are healthy things you can put on bread that aren't the usual ole cold meats and lettuce - this recipe might be the answer. Allow my staple snack to surprise you with a delightful medley of unsuspecting flavors (and probably get you hooked on more).
I honestly don't know why nobody I know ever eats this combination. Now I am on a mission to change that. Ok have a good week :)
