I love this moment for Zaraki. It's a call back to several other little stuff we've seen through the entirety of Bleach. A figure of higher power piercing the child with her blade to turn him into a shinigami, like Ichigo and Rukia. The battle itself being a kind "love" that Nel didn't want give back to Nnoitra through battle which frustrated him so much. The emptiness/stagnation these characters who feel lonely in how they live like Aizen, and finally how easy to accept death as it turns into bliss once they find their battle "soul mate" or "child" figure, tying with Bleach being a setting where afterlife and the end of things matters a lot. And finally, understanding who he actually is. It totally ties to Ichigo's writing with Zangetsu. This fight determines the answer to Zaraki's "Who are you ?" that Ichigo also has to resolve because of the end of the episode. And the answer for the former "Zaraki *Kenpachi*, who inherited this title from Unohana Retsu Kenpachi". So now. To our Ichigo. He says "Renji is a soul reaper, and you are not". So, who are you, Ichigo ?

I definitely get wanted more Unohana as I really love her character as well. Having read and seen it a bunch of time now I think it is clear that the whole fight and flashback is set up to show us that this is how she wanted to die. She could have probably even healed that last hit from Zaraki with her Bankai if she wanted. But she was ready to go. She is more than a thousand years old, probably closer to 2000. She felt in her heart that Zaraki should have killed her and taken the mantle of Kenpachi even as a kid since he was the strongest. But then subconsciously nerfed himself because he was afraid if he killed her, he would never feel that thrill of battle ever again. This is something she feels incredibly guilty about and calls her "sin". Strong words from someone known as the worst criminal in the history of Soul Society. So when he was finally ready to regain that strength, the "borrowed" time she had been living on since their first battle was finally over and she could give him back what she took from him and die with peace in her heart. If you really want to go in depth with it, you could say that she probably didn't think she deserved happiness long term as she had quite literally been the most notorious criminal and killer in Soul Society. Her hundreds of years focusing on healing and helping other was a way to make up for that, but in reality I think she didn't actually believe anything could make up for all the terrible things she has done in the past.
