Mmm! But what kind of cheese? Cheddar? American? Gouda? Mozzarella? Some mix of many curdled milk flavors?

I've had so much success with all of those varieties that I didn't want to dictate a solution :0 Even the classic american plastic slice is pretty good to be dangerously honest...

I gotta agree. Been making grilled cheese sandwiches since you posted this. Been using Gouda and cheddar, along with red pepper flake, a fried onion, a slice of tomato, and spicy brown mustard. I don't have any sour dough, but I do have flour tortillas, and darn are they good! Thank you!
