Regarding your question about what if a Jedi were to lose their lightsaber. They would have to go through the entire process of building a new one. That includes visiting the planet Ilum, to find a new kyber crystal, the most difficult part of constructing your own lightsaber. You will learn more about the process in later seasons of the show, so I'm gonna keep it at that.

A Jedi can also use another person's lightsaber. They can even take one from a Sith or other Dark Force user, but to use it well they must bend it to their will.
