Without spoiling Berserker's identity, Berserker was able to last against Gilgamesh because he has a skill called "Knight of Owner" that soft counters Gil's "Gate of Babylon." It lets him turn anything he touches into a Noble Phantasm (as the show demonstrated against Saber), even OTHER PEOPLE'S Noble Phantasms. That's how he's able to use the weapons against him. That being said, there's a limit to what he can endure. According to the Light Novel, when Tokiomi used the command seal to order Gilgamesh to retreat, his next wave of attacks was about to annihilate Berserker and everyone else in the vicinity. Gilgamesh was getting mad enough to start fighting seriously and he wasted that opportunity to win the war. Nasu has stated that if he felt like it, Gilgamesh could have ended the Zero grail war in a few hours. From the light novel: “The next count of glowing Noble Phantasms reached 32. This time, even Rider kept silent. Berserker has endured a continuous attack of 16 Noble Phantasms, but there was no way to resist twice that number. That was the same for all the servants. 12:38 Fate/Zero isn't a shonen lol, it's a Seinen. It's aimed at an older audience and the themes are darker and more serious. The focus isn't on the battles, it's about the characters. It was written to be similar to a Greek tragedy.
