its a tactic not saying their names, if they know who they are they would know their legend and weaknesses.

Both the name and the noble phantasm are part of the hero's identity so the must remain hidden because it will give away any weakness you might have. Also Saber's sword is invisible because it is a big give away of her identity, you can have many different riders on a chariot, the legendary sword would reveal Arthur's identity immediately. You kind of said that already but I am explaining it a little.

The decision to not tell who the servants are is generally up to the master unless they have servants like rider and archer who are quite self-directed. In most other cases the servant will defer such decisions to their master who will almost always have them keep their identities secret since again it reveals information about what the servant can do, for example, if you know saber is Arthoria you also know one of her abilities has to be Excalibur in some form or another(also why she keeps it invisible). At the end of the day, a master could use a command seal to keep their servant from revealing themselves but if you already have trouble with that decision it might not be smart to use the seal on something of relative value compared to something you really would need you servant to do.

Familiar is a term that usually refers to a small animal mages summon that they use to watch things from afar, ergo the image of the little mouse in the garden where assassin dies being focused on instantly before riders master told him that assassin was defeated etc
