Mei (the little girl) is in Amestris for the exact same reason that Ling is there. She's trying to find the secret to immortality to curry favor with the emperor of Xing so her clan will survive, since her clan, like Ling's, is low on the totem pole

Hey guys, Love listening to you talk out how things work but I feel that you're taking the Avatar example a bit far. A Bender's Bending type is a spiritual and physical limitation placed on a Bender. A fire bender cannot be a water bender and vice versa. However alchemy is more a matter of personality and inclination. There is nothing physically preventing Mustang from doing things exactly as Ed and Armstrong do, minus Ed's ability to transmute without a circle. He doesn't use fire because he can't use anything else he uses it because he prefers to over other things.

Any alchemists can do any alchemy as long as they understand the theory and formula behind the transmutation. Ed is a big deal because he is the youngest state alchemist, and state alchemists are the cream of the crop of alchemists. Besides, state alchemists do carry a rank equivalent of a Major in the military, hence the other military personnel are always very respectful towards him.

All the state alchemist are big deals in the show, not just Ed. Essentially the state alchemist are the elite of the elite. Depending on how their careers go they'll get recognition. Mustang is considered a war hero, so people likely know who the Flame Alchemist is. Ed made a name for himself thanks to all the assignments he's done. Things like overthrowing the priest in Lior for example reflect well on the military and Edward. Fullmetal Alchemist name becomes more wide known to people both in and out of the military.

To perform alchemy, one must be born with an innate talent. So anyone can study and understand the theory of alchemy, but only those with that said talent can perform it. That is why alchemists are rare and revere, and not everyone in the country does alchemy.

Ed & Al are a big deal mostly because Ed, and later Al, can do Alchemy without a circle or diagram. It isn't widely known but people who did what they did, and what their teacher did, see "The Truth" and gain that ability. As for what some other people have said, there isn't anything stopping someone like Mustang doing what Ed or Armstrong do, it's about preference and specialization. One way to think of it is like it's just a different school, like how you have science, but there are subsets of specialization like chemistry, physics, biology etc.

i love how it's been some time since that every episode ends, all 4 of them are like "shit!" because they're so hyped and wants to whats more, so i hope every episode we're getting closer to them doing 2 episodes a week

Ed is the youngest ever state alchemist. Becoming a human weapon at age 12 or whatever is kind of an impressive feat, and something that people would be talking about in the news for a while. It's really as simple as that. The fame and respect has nothing to do with any specialization or skill, it is all age.
