Between all the entries, it was super hard to narrow it down! In the end I ended up choosing these two pieces of Kevin lore to make canon:

1. Kevin evolved late in his life in an unexpected way. He met up with some guys for an orgy, and awoke the next day groggy, covered in cum, and having evolved into a Sylveon... he originally had other plans so it's an embarrassing topic for him
2. Kevin joined a maid café where he does tons of cupcakes. He's the best around and nobody is able to reach is level of cupcake making so he wins awards and is chosen as the best baker ever, opening his own bakery (which sadly went out of business because he kept entertaining the customers instead of baking.)
