Death is depicted as a wolf in a lot of folk lore/fairy tales so it makes sense

When you called him a grim reaper before he revealed himself I laughed at how close you were. Also Castlevania Death isn’t actually death. As Trevor said he is an elemental that calls himself Death due to feeding on what remains of someone’s soul at the moment of death. He is limited in why he can do and admits it himself. This Death on the other hand is Literally Death.

By the way, there are several clues that the Wolf is Death spread throughout. Some you mentioned yourself, such as the fact that he never appears on the map, or just appears wherever he wants, or that he's not affected by the barrier of the star when it's obviously lethal to others. Nor does he get a wanted poster even though every other main character does. He also said in the very beginning that "everyone thinks they'll be the one to defeat him, but that no one has escaped him yet". This is very clever wording since you can momentarily "beat" him as Puss does, but you will never escape him. Also, there is the fact that the Wolf can be spotted in the crowd in the very beginning scene when Puss is fighting the giant. He is in the shot where the crowd does the "wave". AND if you look at the corners of all the death cards for Puss, look in the corners and you will see the wolf and his sickles.
