Dipper isn't canonically trans because the show is based off Alex's life with his twin sister, Ariel and he himself isn't trans, but I do think he said he doesn't mind if people think of Dipper as trans, it's just not how he originally intended when he wrote the character. Also there are a number of characters in the show that were meant to be more explicitly queer in some way, but Alex was often stopped by Disney from making those clear in the series itself. Some examples are Wendy being bisexual and the two cops being gay and in a relationship with each other! Also in regards to shows to watch, personally I'd love to see you watch Star Vs The Forces of Evil! It's a really fun, cute show on Disney+ that I notice most reactors either have already seen before starting their channels (which personally I don't mind watching a rewatch either for more fun community discussions) or they only react to the last couple of seasons which is a shame since the whole show is good in my opinion! It also has a really good upbeat intro song and great outro song too!

Larry King (the wax figure who survived) was a prominent late night talk show host, and they actually got him to do the voice for the character. Sadly he passed away a few years ago.

Yeah I forgot to mention that but I really do love his inclusion in the episode! Even if he is a reference most people won't get nowadays. Lol
