I think the reason Katara trusted Jet so quickly was because he seems like such a good leader and provider. We see at the beginning of series Sokka is kinda lame, yes he hunts, and tries to do warrior things, but Katara seems to be the person cleaning peoples clothes, making food, Gran Gran reminds her she has chores to do. And even when they are getting ready to leave Gran Gran gives like real instructions/advice to Katara, and all she tells Sokka is too be nice to his sister. Katara sees how Jet takes care of all those kids, and I think she feels like sense of safety because somebody else seems to know what they're doing.

But I agree that Katara could have been written better, they kinda did the "sparkly-eyed" teenage girl thing to Korra to. Edit: I didn't realise this comment wasn't on episode 10 💀.
