Showing my ignorance, but these stretching techniques will work on any model? (I remember when models had to be specifically rigged to allow for these kinds of deformations.)

Kiiiinda, but not exactly. The stretching that I do for my renders is actually pretty dependent on the rig the model comes with. There's a commonly used rigging type called rigify, which is made for stretch and squash animation and free deformation on models. It uses a series of 'tweak bones' placed along the torso and each limb that allows me to pull and stretch separate parts of the model in exactly the direction I need to make them bend properly for the intended stretch, albeit a bit limited on how lengthy or complex the stretches/bends can be. A rigify rig can be added to any model if placed properly, but it can be a bit complicated at times. Due to that I usually stick to making renders with already rigified models, and making models using bases that are rigified. (Apologies for the wall of text, I really enjoy talking about rigify lol)
