I dont think they are much older, maybe the animation got better, but there was definitely a time skip of a couple weeks or so, because aangs waterbending skills are much better already.

They haven't got older, age speaking but they do look grown the more you watch. I'm guessing since they are in war and people in war always look different from when they first started to where they ended so makes sense why they 'look older'
