I don't know about that interpretation of the chosen prophecy that you described. I think in canon it just sounds like it's simply bringing balance. As in between light and dark. In my view, Anakin's actions, firstly the destruction of the Jedi order and then the destruction of Darth Sidious will bring balance. They are obviously huge events. But the idea that Anakin created a perfect balance at the end of Return of the Jedi just doesn't match with the canon. Sure the prophecy says that Anakin will bring balance to the force but that doesn't mean that he is the only person involved or that it has to happen while he's still alive. You will definitely read multiple views and theories of the chosen one thing. For sure there isn't just one way to look at it but some people will take stuff from legends or ignore certain parts of canon to explain their theory. Not that there's anything wrong with that. One of the great things about Star Wars is talking to other people about it! And sorry for my long messages!

That's sort of how I thought the balance was accomplished as well, the Jedi got killed and Palpi died, the biggest sources of Light and Dark in the universe extinguished, and now the Father comes along and says that Anakin must take his place to fulfil balance, that just contradicts a lot but I do like how there are now new ways to interpret what it means to balance the Force.
