OH MY GOD. REMS BACK STORY IS BREAKING MY HEART NAH. WHAT THE ACTUAL FUCK MAN. Poor baby was constantly compared over and over and over which is so not ok, they actively created this unhealthy envy between them, whilst Ram's only concern was protecting Rem. I also think Roswaal is the one who "dehorned" Ram, because it kind of flashed back to him when talking about it so i got sus. 

Also, the way Rem was  so so sos so so happy to have Subaru be safe brought me to actual tears, im so happy they saved each other. She doesn't know it yet, but they saved each other. 🥹 I would also like an explanation for the witch's scent on him pls.

Just to clear up some things, since the anime doesn't go into as much detail as the novels it's based on. It was the cult that worships the Witch that attacked Rem and Ram's villiage and one of the cult members cut off Ram's horn. Roswaal was the one who rescued the twins. The pair were the only survivors of that attack on their village. As the others have stated, you should watch the Memory Snow OVA before episode 12 as it takes place between episode's 11 and 12. Be warned that the OVA is an hour long. If you have trouble finding the OVA, it's on Crunchyroll under the Director's Cut episodes, listed as EX, instead of an episode number. Not sure why they put it there, but they did.

Chronologically, the Memory Snow OVA takes place between episodes 11 and 12 and has no real spoilers for later episodes. Technically, the 2nd OVA, Frozen Bonds, takes place right after Memory Snow, but since it deals mostly with Emilia's past before meeting Subaru and contains spoilers for later episodes in season 1, many say to watch Frozen Bonds between season 1 and 2. You can wait to watch Memory Snow after season 1 as well if you wish instead of between episode 11 and 12. You won't miss anything storywise. Many place Memory Snow between 11 and 12 when watching the series since it acts as something of a pallette cleanser after Arc 2 due to it being more light hearted/slice of life focused compared to everything else in season 1.
