I think all the turtles know how to do what aang was taught, remember they turn the bending and off when the humans return. That's what the lion turtle probably taught aang, just the turn the switch. Being in possession of all elements as the avatar is probably what allows the avatar to turn any of them off. As to witch one met aang, you can tell them apart by the marking on their heads. Seems like wan and aang met the same fire turtle (probably why it was close to the fire nation)

This two parter was supposedly originally planned for TLAB, but due to episode constraints and the pacing they didn't manage to fit it in. If you go back to The Library episode in Book 2, you can see Katara or Aang with a book showing the Lion Turtle on a cliff with a human, just like Wan. Some people hate this lore dump but I think it's fantastic, wish Raava/Vatuu weren't giant kites but that's just a nitpick. Can't wait for next weeks!

It's so great seeing Wan, his backstory and the birth of the Avatar here. Generally I disagree with the take that Beginnings is better than the rest of the season, mostly because its usually weaponized by misogynists to discredit the rest of the great this season has as well as Korra's journey as the Avatar. But it was great for the lore of the Avatar in general as well as recontextualizing the fight with Unalaq. Plus, Raava and Wan's dynamic is truly something to behold!
