Yeah the different coloring and the blurring is for the censored version. I would try to find the uncensored version, the further the series gets it gets a little ridiculous with the censorship to the point where you miss whole scenes.

Yeah if possible the uncensored version is best, hopefully you can find it, still this has deffinetly been a super fun series so far looking forward to more

I’m watching on Funimation and it doesn’t have blurred scenes or coloring so I believe it’s the uncensored version.

You mentioned the Hellsing Ultimate OVA's, if you haven't watched it yet I highly recommend watching Hellsing Ultimate Abridged by Team Four Star. I love it more than the original anime.
