In this video we continue a five part series of ‘What’s in your Oven’

For this recipe we need:  

  • 450g currants 
  • 175g sultanas 
  • 175g raisins 
  • 50g chopped glace cherries 
  • 50g chopped candied peel 
  • 225g flour 
  • 1/2 tsp salt 
  • 1/4 level tsp nutmeg 
  • 1/2 level tsp ground mixed spice 
  • 225g dark brown soft sugar 
  • 4 large eggs 
  • 1 dessert spoon of black treacle 
  • 225g spreadable butter 
  • 50g chopped almonds (skin on)
  • Zest of 1 orange & 1 lemon
  • Brandy to feed the cake

Ladies and gentlemen, Welcome back to our brand new ‘Whats in YOUR oven’ series, where we are sharing some of our favourite family, seasonal, culinary traditions. Today its one of our most important! Join Kay as she makes our family Christmas Cake. You have to make it early so you can feed the cake weekly right up until Christmas, thats what ensures you get a beautiful moist cake. Of course you can buy a Christmas Cake in the shops, but once you've tried this cake, you'll never go back. Wow! This looks amazing. I'm very intrigued. It's not dissimilar from fruitcake in the US that is unfairly reviled (except for the brandy) haha. Wonder if we can find treacle anywhere? 😀

This looks delicious! I use a Tasha Tudor recipe for my fruitcake...and I have never tried feeding it with brandy or rum but I might try it this year now that my kids are a tiny bit older. Or maybe I will do it to one but not the other. I use small loaf pans for mine so that I can just cut off slices, and because they are smaller, it cuts down the cooking time significantly.
