In this video we continue a five part series of ‘What’s in your Oven’

For this recipe we need:

  • 1lb (450g) Bramley Apples
  • 2 oz (50g) whole almonds
  • 4 level teaspoons mixed spice
  • 1/2 level teaspoon ground cinnamon
  • 1/4 level teaspoon grated nutmeg
  • 6 tablespoons brandy
  • 8 oz (225g) shredded suet - can be substituted with vegetarian suet
  • 12 oz (350g) raisins 
  • 8 oz (225g) sultanas 
  • 8 oz (225g) currents
  • 8 oz (225g) candied peel finely chopped
  • 12 oz (350g) soft dark brown sugar
  • Grated zest and juice 2 oranges
  • Grated zest and juice 2 lemons

And to finish:

  • 6 x 1lb (350ml) preserving jars
  • 6 x waxed paper discs

Ladies and gentlemen, she's back in the kitchen! Yes, we’re delighted to start today a special ‘Whats in YOUR oven’ series where we share some of our favourite family, seasonal, culinary traditions. Kay will take you every step of the way through a range of wonderful recipes which form a huge part of our lives. Today join Kay as she makes her version of Delia Smiths Special Mincemeat. Its perfect for so many puddings but especially apple and mincemeat crumble, mincemeat ice-cream and of course mince pies at Christmas! We have to make it now so its ready for Christmas as this recipe needs to mature once you have jarred it up.
