Christmas Cake ingredients:

  • 150ml brandy
  • 1 x 400g jar of mincemeat
  • 110g prunes
  • 50g glacé cherries
  • 175g dried mixed fruit
  • 50g whole candied peel
  • 225g self raising flour
  • 3 teaspoons baking powder
  • 150g softened butter
  • 150g dark muscovado sugar
  • Zest of one orange
  • Zest of one lemon
  • 50g Brazil nuts
  • 50g mixed chopped nuts
  • 3 eggs
  • 1 1/2 teaspoons mixed spice
  • Approximately 18 walnut halves
  • Approximately 20 whole Brazil nuts
  • 1 heaped teaspoon apricot jam

I enjoy the show today and that fruit cake looks so delicious. All the plans for next year sounds so marvelous. The pink yarn would be a wonderful Christmas Eve cast on, do you take a pattern or just knit a plain sock? And that idea about a pink granny square ... love it !
