The point is not that they don't know they are called zombies. The point is zombies don't exist in TV shows in their world. Imagine no one had ever done a TV show or film about zombies - that genre doesn't exist. So then, if the dead rose and started walking around we wouldn't know anything about them, this is how it is in TWD universe. The zombie genre doesn't exist so they have never seen anything like this before
