Switched time zones so now I fear missing every live stream. I loved this though. I’m so glad you’re getting back to ASOIAF and even more importantly the topic of pizza. Eagerly awaiting the five part pizza video series. Until then, I’ll share some knowledge. She’s far too polite to correct you but Kelly’s name is actually pronounced Jelly Tadpole.

I’m back. And I got a lot of shit to say. Later. Hope you are staying hydrated. And the correct way to enjoy pineapple on pizza is to make a sauce from the pineapple. Pineapples have a water content issue that sogs out the crust and ruins a good thing. So you cook it down first to get rid of the water and intensify the flavor. Add some coriander ( cilantro). Roast a few tomatoes and add them. Garlic? Fuck yeah. Then when the pineapple sauce is ready load it on the pizza , top it with some salty smoky ham. I prefer speck but a good country ham will do, even some of the thick cut applewood smoked bacon will work. Just make sure you also par bake the bacon to remove excess oils and ..... water content. Now cheese. This is a touchy subject. I think you need a good sharp aged cheddar. You know, the kind that are crunchy? And then some melty cheese. Mozz is good, fontina is better. Take that bad bitch pizza out ( bake it dark) and immediately dust it up with dried oregano, red chili flakes, and fresh parsley. And serve with a side of water , the seven know you will need it. And cut it immediately but let it cool and recut before serving. Enjoy.
