The anime is literally as a thanks to the fans for liking FGO so much. They did a poll for what was the players' favorite Singularities, Camelot and Babylonia won by a long shot, thus they're the ones that got into animated form. The other Singularities are in FGO, they'll be there for those who somehow missed out on what happened before. Fate grand order is a mobile game.

If you want to know the rest of the stories of fate go, you will have to play the game. There are 5 other stories in part 1 of fate go (New Orleans story, Septim story, Okeanas story, London story, America story, then 4 side stories at 1.5 (epic of remnant stories), then the 6 Lostbelt stories which have also not been animated. I would honestly recommend just playing the game regardless btw, it's really fun as long as you don't have an addictive personality or a gambling problem.
