I'm not sure, because I haven't read the manga. But the reason that Nezuko survived the sunlight could be because "Technically" she's not a full demon. After all, she hasn't fed, and the whole premise of bringing her back to human included her not feeding. So if feeding is a requirement for becoming a full demon, Nezuko is technically halfway into the process, making her both human and demon. So the morning could have just burnt up her demon side, while keeping her human.
