I like how you almost said "our" Uncle Iroh. It's okay. We all wish he was our Uncle Iroh. lol. I like the first one a lot better than the second, but the second one has some good stuff too, gives the characters a little room to breathe. With the second one, I liked that Sokka was able to find his own way out using intelligence while Aang and Katara, who are a little more spiritual, are guided out another way. Both ways get them out of the cave; they just have to take different routes. For the first one, I just love all the fight sequences, plus Azula.

One thing I have noticed about 2020 - we have had a great number of top tier father figures in the shows your reacting to - Giles, Hammond, Iroh, Gaius. Although think we best leave Mr Robot off that list, lol

Ep2 does feel like a sort of "town of the week" episode, but for some reason I found it a little more engaging than most of the similar episodes from last season. I think the writing is just a lot more confident after being renewed, the one-off characters were more fun to watch, and there weren't really any super cartoony moments. Ep1 is just great, you basically can predict what's going to happen but it still manages to produce a lot of tension. And Azulaaaaa

I am also really glad they didn't go with just "Sokka is wrong for not blindly believing a half-remembered folk tale told by a bunch of stoners." Their solution was related to the legend, but was also practical in a way that works for Sokka's personality.
