In the books, dragons can apparently change their sex -- "as changeable as flame," according to one character -- but it's all very mysterious. Incidentally, this is also the basis for the theory that Valyrian *nouns* are genderless, and that "the Prince that was Promised" could refer to a prince or a princess (i.e. Dany). Melisandre confirmed this (in show canon) in S7 of Game of Thrones.
