The older "no-look" quick in inferior to their new quick. This new quick is just as quick as the old one (at least it's never implied that the newer one is slower). Even if we assume that the newer quick is slightly slower, it is still a better choice because of the many options that Hinata has mid-air to spike the ball. Also, I don't think they've practiced the older quick in the last few months. So going back to it would be too risky imo

The new quick is still a minus-tempo virtually unblockable attack. But as other teams have shown, if you use it all of the time then the other team gets better at reacting to it. As far as stamina though, this is the team that's won and gone to nationals three years straight, so they are use to being in these longer five set matches. If anything, Karusuno would have a stamina issue since they just had that epic long match with Aobi Johsai yesterday, and now have to face these guys today. And Shiritozwa(however you spell it) blew through their last game in like 30 mins or so. Wasn't even close and they wasted zero energy on it, so they are READY ready.
