The symbolism of the wine as temptation in this show has always been one of my favorite literary devices. Alllll the way back in episode 6 during their first conversation- and the beginning of Gilgamesh's temptation-, Gilgamesh offers Kirei a glass of wine. Kirei doesn't drink it and calls Gilgamesh a "King who rules over the vulgar". In episode 12 when Gil really begins to push Kirei, Gil once again offers Kirei a glass of wine. Kirei takes it this time, but still doesn't drink it. In a last-ditch effort to remain true to his faith, he calls Gil an "inhuman monster". And now, in episode 21, Kirei finally drinks the wine and notes that he'd love to sample it again, completing his fall from grace as he finally embraces his true self: that he derives pleasure from the suffering of others.
