OVA's are usually special bonus episodes. They generally don't really cover things that are essential to the plot either. But it varies quite a bit in intent. They can show more in OVA's than they can show on Japanese television, for example. So there's actually quite a few 'ecchi' (perverted) anime out there that have bonus episodes that show much more than the anime does. Some have actual sex... still censored because Japan, but I think they show pretty much everything other than genitals. But I also recall a comedy anime called Excel Saga that released the 26th episode as an OVA and included all kinds of stuff that couldn't do on TV. So jokes that went much further, nudity, violence, etc. There are also some OVA's that are completely original and not based on any anime. I think they used to make quite a few of them in the 90's and early 00's. And yes, they also pretty much have content they couldn't show on Japanese TV such as extreme violence and actual fully uncensored sex scenes (laws were less strict back then). Though honestly, I'm not sure why shows like Demon Slayer are able to get away with showcasing so much violence. I think it's generally forbidden to show decapitation or amputation on Japanese television and in videogames (in Japan) these days. At least when it concerns human-like beings. I guess there's probably some men in those rating organisations out there that require their deep pockets to be filled before they allow it.
