I'm sure you realize that each of these is the first film in a franchise, right? However, not all have the same number of sequels, and not all of the sequels are equally watchable. Personally, I'd start with Oceans 11, 12, and 13. (Whether you watch Oceans 8 is up to you...) Oceans 11 is *the* iconic heist film today. Next, I'd watch the Bourne trilogy. (Again, whether you continue after the first three films is up to you...) The action is fantastic, and the mystery of his back story adds to the plot. Eventually, it will be time for the Mission: Impossible series, but as others have said, I'd wait for a while before embarking on that lengthy journey. The eighth film is supposedly set for release in 2025, so there's that...

Eh, I'd go the other way around. From what I recall, the first "Ocean's" movie largely stands on its own, so the sequels aren't as necessary, whereas you can sense there's definitely still more to the story at the end of the first Bourne movie.
