Wesley, you are right, Muzan is the one that killed Tanjiro's family. Remember Tanjiro smelled him at the house and that's how he was able to find him in Tokyo. Muzan doesn't team up with Demons, he's their master. They have to do what he says, Tamoya is the only one that's escaped him.

1) Tamayo and Yushiro aren't helping Nezuko because they're shocked at Nezuko's combat prowress increasing. Also cuz the two aren't good at combat. 2) Never go all out from the beginning. In majority of worlds and stories, showing all of your cards instantly will become your downfall. In many isekai or fantasy worlds, not learning to hold back is one of the worst things you could do for many many reasons - destroying environment - people nearby are affected by environmental damage, or are hurt/killed in the process - the drawback/sacrifice needed to unleash all of your power. If you do not understand the drawback of going all out with your own powers, you end up killing yourself. - depending on your powers, it will also change how people perceive you and will also ostracize/cancel your life and any way to reach the top in society. The point about being a 'man' or 'human' is knowing how to hold back and knowing when to use your 'true strength' when the situation calls for it. That's literally why heroes hold back their power or seal away their powers or give up temporary/borrowed OP strength.

Muzan creates demons. He doesn't want to risk having a Demon become stronger than him or strong enough to kill him. He's one of those archetype characters who are obsessed with immorality and scared of death/mortality, so they purposely keep everyone weak or separated enough to keep himself safe or 'in control' of them. He keeps demons in check because he's strong enough, but he wants to prevent a huge 'uprising' and another 'faction' of demons. If any demon is foolish enough to do so, other demons may be inspired to do the same. So he quahes all those who dare rebel against him.
