Fasting has been a thing since the 5th century BCE when the Greeks practised it as a means of curing certain illnesses. Religious fasting also began around the same time as the Jewish people began celebrating Passover.

Elizabeth and Edward IV were married May 1st, 1464 and their daughter was born February 11th, 1466. The marriage between Henry Stafford, Duke of Buckingham, and Catherine Woodville was very real. They were actually married in early 1465, although the ages are about right. Henry was ten, while Catherine was eight. As to Edward possibly being a bastard: his mother, Cecily Neville would never publicly admit that he was an illegitimate son because, yes, it would make her look bad, but in her mind it's better to accept a little public shame by backing his brother who, if made king, she still has control over. The Battle of Edgecote Moor, where Edward was captured and Elizabeth's father and brother were executed, took place on July 26th, 1469 so Henry Tudor would now be twelve (eight I guess in the tv series since he was really nine when he was stripped of his title.) The show has been very historically accurate so far, with the exception of changing the timing of certain events and the ages of some characters of which I have noted above. To the best of my knowledge of the Wars of the Roses, everything else they've shown has been accurate.
