The bigger picture of the story is revealed in S2, but only a bit. S3 is coming very strong, the trailer is very hype, it looks kind of like GoT S6 or smth. Also there's gonna be more seasons than 3 i believe.

To me, season 1 was more about making connections and giving more depth to the main characters but season 2 is where the big picture starts to be revealed

Re:zero's openings and endings might have a few spoilers, but they're really subtle and you won't even realize they are. So it's ok for you to watch them once they are first released.

I love Re:Zero although I didn’t realize until now how slow things are in the beginning of season 1, it’s just learning and understanding the characters and building connections. Season 2 will get more in depth of the story and the bigger picture

Depends, Naruto's first openings aren't spoiling i think. Just in Shippuuden they started showing things they shouldn't.

2nd half of season 1 picks up a lot of pace and season 2 part 1 goes into a full sprint.

All of the questions you have about the bigger picture will come in time, its a really big story in a really big world and a lot is happening, its perfectly normal to not understand every bit that is happening, its intended. I really enjoy watching this anime again with both of you because i can see small details that will have a big impact later and small foreshadowing here and there, and its awesome !

You guys don't have to worry so much. Everything DOES tie into the Jealous Witch at the end of every season, and especially throughout the whole anime. It might not be obvious, but there are either mentions of the witch or things connected to the witch, so you'll just have to keep an eye out for anything that sounds interesting or confusing lolz.

Subaru's connection to the Jealous Witch is defo the big picture, you don't have to worry about that being forgotten or ignored throughout the anime. But some of the slightly smaller stories, such as Rem and Ram's backstory, are also relevant enough that you should take note of it and hopefully remember things like Ram losing her horn.
